Onions are expensive, or they are when you buy them by the kilo from the supermarket. I like to buy my onions (when we run out of our homegrown varieties) in 10 kilo bags from the market.  But onions that have been stored for a long time can become too strong in flavour. To temper the flavour slice and soak in cold water for ten to fifteen minutes. Drain, pat them dry with a tea towel and use as usual.

For very long term storage, peel, slice or dice and freeze in ziplock bags in 1/2 cup portions. They are then ready to use straight from the freezer, saving you a little time when you are cooking and preserving onions that may otherwise have gone soft and sprouted in the pantry.
