Crispy Potato Cakes



Ingredients:

1kg potatoes, peeled and grated
1 onion, grated
3 eggs, beaten
1/2 cup seasoned dry breadcrumbs

Method:

In a large bowl, combine potatoes, onions eggs and breadcrumbs. Season with salt and pepper. Add some oil to a heavy based fry pan. Drop mixture by the spoonful into the hot oil. Brown on both sides. Remove from the pan and serve hot with a salad.
