Cath's Meal Plan 15 - 21 May 2016


This week we will be eating:

Sunday: Roast Lamb

Monday: Lamb kebabs (leftover lamb in pita bread with lettuce, tomato, onion, garlic mayo)

Tuesday: Stuffed drumsticks, baked veggies

Wednesday: Homemade mac’n’cheese, salad, bread

Thursday: MOO Pizza

Friday: Honey soy stir-fry, Singapore noodles

Saturday: Homemade hamburgers

Divine Burgers

Ingredients:
1 tin Sanitarium Rediburger*
1 cup TVP
1 cup boiling water
1 grated onion
1 egg, beaten

6 hamburger buns
lettuce leaves
sliced tomato
6 slices cheese
1 large onion, thinly sliced
2 tbsp tomato sauce
2tbsp mayonnaise

Method:
To make the burgers: Pour the boiling water over the TVP and let it steam for 5 minutes. Mash the Rediburger, add the grated onion, TVP and beaten egg. Mix well. Shape into 6 large burgers. Refrigerate for 15 minutes. Heat a grill, bbq or frying pan until hot. Spray with cooking spray or lightly oil. Add the slice onion to the pan to cook. Fry burgers over a medium heat for about 2 minutes on each side, until they are browned and set.

While the burgers are cooking toast the hamburger buns. Mix the tomato sauce and mayonnaise and spread on one side of each bun. On the other side put a lettuce leaf, sliced tomato and slice of cheese. When the burgers and onion are cooked place a burger onto the cheese, add some onion and top with the other half of the hamburger bun.

*If you can't get Rediburger (it has been discontinued!) use Nutmeat.

  1. Well I have the lamb already so will do the lamb wraps with the leftovers as well. Thankyou for that idea. Please could you direct me to your stuffed drumsticks recipe, i have done a search but actual recipe does not come up.

    1. No recipe, stuffed drumsticks are just that.

      I make a bread stuffing mix up with bread, herbs, egg and push it under the skin of the drumsticks before they're put into the oven. Add about 10 minutes extra cooking time to make sure is is all cooked through.

  2. Hi Cath, I tried looking up the Sanitatium Rediburger but couldn't find it in Coles, where do you get yours from? And do you buy TVP from the health food shop? Many thanks, Emma

    1. I buy my Sanitarium canned foods from our local Adventist Book Centre, usually once a year and of course in bulk :)

      I've been told that Rediburger is no longer being made, you may find some still on the shelf, and that the replacement is the Vegie Delights Roast. You can use Nutmeat or even mashed Tender Pieces. You'll need to add more seasonings though, Rediburger is heavily seasoned which is why it was such a great product for burgers, meatloaves, rissoles, sauces etc.

      I still have four cartons so I'm set for a while before I need to start experimenting with the other options.

    2. Sorry, clicked before i answered the TVP question. I order it in 5kg lots from a whole foods store in Croydon, Vic - The Full Pantry. They also have a store in Yarra Glen. I get my spelt and gluten flours from them too.
