Try mid-November if you want to freeze them. Or make the dough now and bake them closer to when you want to use them. Cut them into fingers/triangles/circles and flash freeze, then double wrap. To bake them put them on a lined baking sheet and bake from frozen, adjusting the cooking time by about 5 minutes - that will depend on your oven of course.
