We are still eating out of the freezer, Hannah and I had freezer meals (single portions of leftover dinners) last night while the boys and Wayne had MOO pizza. The freezer is still looking full though!
I'm finding it hard not to add to it, especially when I've been given a big bag of sweet potato and another of broccoli. The sweet potato was cooked and mashed and measured into 1 cup portions and I did add it to the freezer. It goes into muffins and cakes to boost their nutrition (one of my favourite ways to use sweet potato is in Sweet Potato Chocolate Cakes). Another favourite, and a great meatless meal, is Sweet Potato Fajitas.
The broccoli is in a gel bag in the fridge. We'll get through it this week, I'll use it as the green vegetable for our meals this week.
Sunday: Roast Lamb, baked potato, onion, sweet potato, cauliflower, peas, gravy
Monday: Fish Alaska, salad
Tuesday: Spaghetti Bolognaise, salad
Wednesday: Beef & Mushroom Stew, mashed potato
Thursday: MOO Pizza
Friday: Tandoori Lamb Shops, rice, salad
Saturday: Mexican Meatballs, Spanish Rice
