Quickie fruit cake
Ingredients:
1kg mixed fruit
600ml chocolate milk
2 1/2 cups SR flour
Method:
Soak fruit in chocolate milk overnight. Pre-heat oven to 180 degrees Celsius. Grease and line a 20cm round cake tin. Stir self raising flour into fruit and milk. Stir with a wooden spoon to combine. Pour cake batter into prepared tin. Pat top of tin with wet hands, this helps the cake to rise evenly and without cracks. Place into oven and bake for 1 1/2 hours or until a skewer inserted into centre comes out clean.

I used this receipe but instead of the milk it said to use cold tea. It tasted really yummy but without the extra cal.

ReplyDelete600 fruit, 600ml water, 3tbs instant coffee, 3tbs sugar and only 2 cups s.r. flour. No win on the calories. I have been known to leave it soak for up to 48 - 50 hours, the long soaking makes a fantastic textured cake. cook 160 c for 2 hours.
