White Choc Anzac Biscuits


When we cleaned the pantry out last week, I found a packet of white choc bits that had been opened and somehow forgotten. Turns out it was opened while Wayne and I were on holiday, so not too long ago, but they needed to be used up.

I was going to bake anyway, we had nothing in the biscuit tin, so I made a batch of White Choc Anzac Biscuits. I didn't know that was what they were as I was measuring out the ingredients, but once we tasted them, that's what they were named.

They're based on my ANZAC biscuit recipe, with a couple of alternations.

White Choc Anzac Biscuits

Ingredients:
1 cup rolled oats
1 cup plain flour
1/ 2 cup sugar
1/2 cup white chocolate chips
1/2 cup coconut
125g butter
1 tsp vanilla extract
1 tablespoon golden syrup
1 teaspoon. bicarb. soda
2 tablespoons boiling water

Method:
Pre-heat oven 160 degrees Celsius. Combine oats, flour, sugar, white chocolate chips and coconut. Combine butter and golden syrup, stir over gentle heat until melted. Mix soda and boiling water, add to melted butter mixture, add vanilla extract, stir into dry ingredients. Place teaspoons of mixture on lightly greased trays. Bake 15 minutes or until lightly golden - watch them carefully, they will brown and burn quickly after the 15 minutes.
