Boiled Chocolate Cake
This is one of the moistest cakes around. Not quite as dense as a mud cake, but every bit as delicious, it costs approximately $2 to make. It's so moist and delicious you don't need icing, just dust the top with a little icing sugar to serve.
Ingredients:
1 cup water
2 tbsp cocoa
1 1/2 cups sugar
2 eggs
125g butter
1 1/2 cups SR flour
1/2 tsp bicarbonate soda
Method:
Pre heat oven to 180 degrees Celsius. Grease and line a 20cm round cake tin. Place sugar, water, butter, cocoa and bicarb soda in a saucepan and stir over a low heat until the butter melts. Bring to the boil and simmer 5 minutes. When the mixture is cool beat in the eggs and flour. Pour into prepared cake tin and bake for 1 hour. Allow to cool in tin 5 minutes before turning onto a cake rack to cool completely.

ReplyDeleteIf I can, anyone can :) I've been making this cake since I was about 13, it's out of my high school home ec recipe binder I had to put together for an assignment. We had to find a recipe and tweak it to make it our own. I tweaked and tweaked and voila - boiled chocolate cake!
DeleteMy recipe calls for 1 tspn of Cocoa rather than 2 Tab of cocoa. I guess the 2 Tab of Cocoa would make a 'richer' chocolate cake?
ReplyDelete1 teaspoon of cocoa isn't very much in a cake of this size. The two tablespoons gives it a definite chocolate flavour :)
