Mix 4 eggs with 1 cup of cream or yoghurt add 2 cups of sugar and 1/3 cup of oil . Slowly add 3 cups of self - raising flour. Divide the mixture between 24 cupcake papers and bake at 180 degrees for 7-10 minutes. Bake for 5 -7 minutes if making mini cupcakes.
This is your basic recipe for 24 good size cup cakes . I put a no-name packet of choc chips or do half the mixture with frozen blueberries and half with half a packet of choc chips for variety.
We eat a few while fresh then put them in freezer bags in groups of 4 ( four kids) freeze them and when making lunches pop them into the kids lunch boxes straight from the freezer. A batch of 24 costs about $3 - $4 depending on ingredient brands. You can make white choc and coconut (half a cup of each) , grated apple and cinnamon what ever takes your fancy! Cheap and you know what the kids are eating.
