Mexican Chicken Casserole


Ingredients:
1 chicken breast fillet, cooked and shredded with a fork
1 cup grated cheese
1 can cream of chicken soup
1/2 cup milk
1/2 cup natural yoghurt
1 can diced tomatoes
1/2 packet taco seasoning (or more- to taste)
1 pkt corn chips, crushed

Method:
Pre-heat oven to 180 degrees Celsius.  Grease a greased lasagne dish.  Combine chicken, 1/2 cup grated cheese, soup, milk, yoghurt, tomatoes and taco seasoning. Put a layer of crushed corn chips (about 2 cups) into the bottom of the lasagne dish, then a layer of the chicken mixture. Repeat once more, ending with a layer of chicken mixture. Top with remaining grated cheese, cover, and bake for 30-35 minutes, till bubbling hot.

  1. This dish is going to be tomorrow nights Dinner, I have all the ingredients already in my pantry except for the tin of soup ( I never buy tinned soup )

    Bought your new book and I am just about to read the chapter on The Value of a Price Book, at the moment I get by by reading the weekly flyers sent out by our local Supermarkets and sourcing fresh produce at our markets. But maybe your idea will help me stock my pantry when the specials come out. I have never thought of them coming in cycles so this will be hopefully something I will be able to get my head round to save me money.

    1. Maureen a price book, no matter how simple, will save you loads of stress when trying to work out the cheapest price and best time to buy things on your grocery list.

      Just start one - don't make it over complicated and don't over-think it. Start this next shop by listing all the things you bought, where and the price and move on from there.

      They really do help you to save a lot of money.

      Oh, and they're not just for groceries. School uniforms, household items, stationery - whatever you buy regularly can be tracked in a price book.

    1. Next time this recipe features on my meal plan I'll take a photo. As it's not on the meal plan just yet making it just for a photo is a waste of good food.
